The Bean:
This yellow Bourbon varietal has won many awards for its exceptional quality. Fazenda Cachoeira da Grama has been in the Carvalho Dias family since 1890, sitting at an altitude of 1220m above sea level and boasting an annual average temperature of 19 degrees Celsius with annual rainfall of 2000mm. These perfect growing conditions and the farm's certified compliance with Rain Forest Alliance and BSCA protocols makes for an ideal direct trade relationship. 

The Process:
Harvesting by hand picking, the beans drop onto a cloth. The harvested coffee is immediately transferred from the fields for processing, where the separation of the bean from the cherry occurs. The mucilage is still on beans as they dry under the sun on a terrace until they reach 20% humidity. At this stage, the coffee is transferred to dryers to further reduce humidity to 11%, after which they are ready for packing and shipping.
